   With a pantry filled with pasta a fantastic meal is moments away - be it a hearty and satisfying meal of spaghetti, sausage, tomato sauce and oregano, or an exotic dish of radiatore, fennel, shrimp, and olives. Below is a light low fat fettuccine dish which is quick to make and easy to resource from a depleted fridge.

Lemon-Chive Fettuccine

Ingredients:

6 ounces uncooked fettuccine
1 1/2oz low-fat sour cream
3 tbsp chopped fresh or 1 tbsp freeze-dried chives
1 tbsp grated lemon peel
2 tbsp lemon juice
1 tsp margarine, softened
1/2 tsp salt
1/4 tsp white pepper

Method:

Cook fettuccine as directed on package-except omit salt; drain. Mix remaining ingredients and toss with fettuccine.
